So many things come to mind when I think about autumn. It’s sweater weather at last. The days are chilly, and the nights are much cooler. The leaves are putting on one final spectacular display of splendor, and the holidays are approaching. That also translates to delicious comfort food. These Healthy Pumpkin Muffins are a good example.
Making pumpkin bread has always been a favorite of mine. It also helped that a close friend gave me a beautiful Williams-Sonoma pumpkin bread pan. That pan is amazing, and the embossed pumpkins are stunning. It just inspires you to bake. So every year in the fall, I get out the bread pan and make some pumpkin bread.
This year, though, I decided to shake things up a little. Pumpkin muffins were my choice. And, of course, I wanted them to be healthy. So I decided to create my own oat flour out of rolled oats instead of flour. With a food processor or blender, it’s a breeze.
The outcome was a moist and delicate muffin thanks to the pumpkin purée. I opted to create a crumble for the topping instead of putting nuts within.
These were a huge hit right away.

Pumpkin Muffins: How to Make Healthy Pumpkin Muffins
In a food processor, mix rolled oats until they form oat flour. It will take 3-4 minutes to complete this task.
It transforms into a light and fluffy flour.
Then, in a medium mixing bowl, combine the dry ingredients, including the oat flour, sugar, baking soda, pumpkin pie spice, and salt.
In a separate dish, whisk together the wet ingredients: pumpkin purée, almond milk, butter, eggs, and vanilla extract.
Fold the wet mixture into the dry mixture carefully. This is crucial because if you overmix the muffins, they will not rise.
After that, line a 12 cup cupcake pan with muffin liners. On Amazon, I discovered these very beautiful muffin liners, but ordinary muffin liners would also work for this recipe. Then equally distribute the pumpkin batter among the muffin liners.
I didn’t include nuts in the muffins on purpose since they tend to soften when cooked in batter. So I made a crispy coating using oat flour, brown sugar, pumpkin spice, salt, melted butter, and candied pumpkin seeds from Trader Joe’s instead.
I cooked the muffins in a 375 F preheated oven for approximately 28 minutes after equally distributing the topping over the muffins.

Preheat the oven to 375 degrees Fahrenheit.

Blend the oats in a food processor for 3 minutes, or until they form oat flour. (Save 1 cup of the mixture for the topping.)

Fill the muffin tins halfway with pumpkin batter.
To make the topping, combine the nuts, brown sugar, sugar, pumpkin pie spice, salt, and melted butter with the reserved 1 cup of oat flour. Stir until the mixture is crumbly.
Distribute the topping evenly among the muffins. Then, approximately 1/2 teaspoon pumpkin seeds should be sprinkled over each muffin.
Bake for 25-28 minutes, or until a toothpick inserted into the center comes out clean.
