Instructions:

1. Place the chicken carcass in a large pot or slow cooker. Add the chopped onion, carrots, celery, bay leaf, peppercorns, salt, and water. If using wine, add it now as well.

2. Bring the mixture to a boil, then reduce the heat and simmer for 3-4 hours. If using a slow cooker , cook on low for 6-8 hours .

3. Remove the pot from the heat and allow it to cool slightly. Use a slotted spoon to remove any large pieces of bone or vegetable matter .

4 . Strain the broth through a fine mesh strainer into another pot or bowl . Discard the solids .

5 . The broth can now be used immediately or refrigerated for later use . It will keep in the fridge for 3 – 4 days or frozen for up to 3 months .
