In the spirit of low carb Christmas cookies, here is a recipe for keto thumbprint cookies. These are crispy on the outside and soft and chewy in-between with just enough sweetness to have you wondering why it’s not Christmas all year round.

The “keto thumbprint cookies with icing” is a low carb Christmas cookie that has been around for centuries. The recipe calls for almond flour, coconut flour, erythritol, and stevia extract.

Who can say no to delicious keto shortbread biscuits with a fruity jam in the middle? It’s a crowd-pleasing gluten-free dessert that’s excellent for the holidays and adds a festive touch to your table.

The customary technique of creating a hole in the middle of each cookie for the filling gives thumbprint cookies its name. Of course, you could use a rounded half teaspoon to make that little hole in each cookie, but it’s much more fun to use your thumb!

Thumbprint cookies are a traditional Christmas dessert that appear at almost every holiday event. The original thumbprint cookie recipe dates back to the 1950s, and it’s no surprise that it’s grown so famous!

It’s probably because they have a melt-in-your-mouth texture and include so many people’s favorite ingredients: buttery cookies, almonds, and jam. Is it possible to produce anything more delectable than that?

Do Thumbprint Cookies Fit the Keto Diet?

Regular thumbprint cookies prepared with white flour, sugar, and jam are unfortunately not keto-friendly due to their high carb content.

However, we changed just a few ingredients to make keto almond flour thumbprint cookies with only 3 grams of net carbohydrates per serving.

Even if you don’t follow a keto diet, you can enjoy these cookies since they’re baked with almond flour and keto sweetener.

These Keto Thumbprint Cookies’ Ingredients

To create these delectable keto cookies, you’ll need the following ingredients, which are all readily available.

  • Butter may be substituted with coconut oil. To combine and form a smooth batter, make sure all of the ingredients are at room temperature. Use coconut oil that is soft enough to scoop readily from the jar rather than molten coconut oil.
  • Cream cheese — I chose full fat cream cheese since it helps the cookies have a creamy feel.
  • Sweetener — Erythritol is my absolute favorite keto-friendly sweetener. It has no influence on blood sugar levels, is completely safe, and has no unpleasant aftertaste.
  • Almond Flour – use blanched almond flour that is superfine.
  • The egg serves as a binder.
  • Vanilla Extract – Use the best vanilla you can afford to ensure that the tastes don’t fade during baking.
  • Raspberry Jam — I used my Raspberry Chia Seed Jam recipe, but a sugar-free jam may be purchased at the shop.

What Are Keto Thumbprint Cookies and How Do You Make Them?

If you follow just a few simple steps, you can bake a batch of delicious Keto Thumbprint Cookies in no time:

  1. Combine all of the ingredients in a mixing bowl and stir until thoroughly blended.
  2. The cookie batter should be kept refrigerated.
  3. Form the dough into 16 tiny balls and set them on a cookie sheet coated with parchment paper.shape the cookie dough
  4. Make a hole in the top of the biscuit using your thumb.use your thumb to make a hole
  5. Fill a well in each cookie with a little quantity of raspberry jam. Take care not to overfill the container.fill each cookie with jam
  6. Bake until the edges are golden brown.

Almond Flour Thumbprint Cookie Instructions

  1. These cookies are going to be soft right out of the oven. Before moving them to a cooling rack, I suggest letting them rest for 10 minutes.  
  2. Refrigerate the dough for at least 30 minutes after you’ve prepared it. The dough is fairly sticky, and rolling the cookie balls with unchilled dough and warm hands would be almost impossible.
  3. If the cookies seem to be too soft after shaping, place them in the refrigerator.

What Is The Best Way To Store Keto Thumbprint Cookies?

  • Refrigerate for up to six days after making these thumbprint cookies.
  • You may also leave them out on the table for two days; they will dry out in that time.
  • To freeze these cookies, just store them in an airtight container and freeze for up to a month.

What are the best sweeteners for these cookies?

For making keto cookies, erythritol is the finest sweetener to use. Because of the erythritol, they had a fantastic chewy texture with a light aftertaste (if at all). 

They were perhaps a touch too sweet for me, but they were wonderful for my family.

You may, however, use your preferred 1:1 granular sugar substitute.

There are a few options for the raspberry jam filling:

I like to create my own raspberry jam filling, but you may also use sugar-free store-bought jams. 

Just bear in mind that the nutritional values of this kind of jam vary, so double-check the carb amount. 

If you don’t have time to make your own raspberry jam filling and can’t locate any at the store, another fantastic alternative is to simmer your favorite berries with some sweetness on low heat until the mixture thickens. Use a little xanthan gum to thicken the jam even more.

  • Combine the melted coconut oil or butter, egg, cream cheese, sweetener, and vanilla extract in a large mixing bowl. For approximately 2 minutes, beat with an electric mixer until thoroughly combined.

  • Mix in the almond flour and baking powder. Continue combining until you have a sticky cookie dough. Freeze for 5 minutes or chill for 20 minutes.

  • Preheat the oven to 325°F/160°C and line a baking sheet with parchment paper in the meanwhile. Remove from the equation.

  • Place the cookie dough on the cookie sheet in 1.5 inch balls.

  • Make an indentation in each cookie by pressing your thumb into the middle of the cookie dough ball.

  • Fill each indentation with roughly 1 teaspoon of sugar-free jam.

  • Bake for 12-15 minutes, or until the edges of the cookies are golden brown.

  • Allow to cool for at least 10 minutes in the oven before transferring to a wire rack to cool fully.
