Healthy Pumpkin Muffins

These healthy pumpkin muffins are a great way to start the day. They’re made with whole-wheat flour, oats and pumpkin puree, and they’re sweetened with maple syrup and brown sugar.

These healthy pumpkin oatmeal muffins are a great way to start your day. They’re made with whole grain oats, pumpkin puree and spices like cinnamon and nutmeg.

These Pumpkin Muffins that are good for you are moist, delicate, and delicious, plus they’re very simple to prepare. You’ll want to make these again and again after just one taste.

So many things come to mind when I think about autumn. It’s sweater weather at last. The days are chilly, and the nights are much cooler. The leaves are putting on one final spectacular display of splendor, and the holidays are approaching. That also translates to delicious comfort food. These Healthy Pumpkin Muffins are a good example.  

Making pumpkin bread has always been a favorite of mine. It also helped that a close friend gave me a beautiful Williams-Sonoma pumpkin bread pan. That pan is amazing, and the embossed pumpkins are stunning. It just inspires you to bake. So every year in the fall, I get out the bread pan and make some pumpkin bread.  

This year, though, I decided to shake things up a little. Pumpkin muffins were my choice. And, of course, I wanted them to be healthy. So I decided to create my own oat flour out of rolled oats instead of flour. With a food processor or blender, it’s a breeze.  

The outcome was a moist and delicate muffin thanks to the pumpkin purée. I opted to create a crumble for the topping instead of putting nuts within.  

These were a huge hit right away.

Healthy Pumpkin Muffin Ingredients

  • Oats, rolled: These will be ground into flour in your food processor. 
  • True, I used honey instead of sugar, but sugar works great in this recipe.
  • Baking soda: This ingredient helps the muffins to rise nicely.
  • What else might pumpkin pie spice be used for besides pumpkin muffins?
  • a pinch of salt
  • The star of the show is pumpkin purée.
  • Almond milk is my go-to beverage.
  • For moistness and taste, use butter.
  • Eggs: Once again, for rising.
  • Vanilla: When it comes to taste, nothing surpasses vanilla.
  • For a crisp caramel taste, use pecans.
  • Pumpkin Seeds: For the perfect crunch this time of year 

Pumpkin Muffins: How to Make Healthy Pumpkin Muffins

In a food processor, mix rolled oats until they form oat flour. It will take 3-4 minutes to complete this task.

It transforms into a light and fluffy flour.

Then, in a medium mixing bowl, combine the dry ingredients, including the oat flour, sugar, baking soda, pumpkin pie spice, and salt.

In a separate dish, whisk together the wet ingredients: pumpkin purée, almond milk, butter, eggs, and vanilla extract.

Fold the wet mixture into the dry mixture carefully. This is crucial because if you overmix the muffins, they will not rise.

After that, line a 12 cup cupcake pan with muffin liners. On Amazon, I discovered these very beautiful muffin liners, but ordinary muffin liners would also work for this recipe. Then equally distribute the pumpkin batter among the muffin liners.

I didn’t include nuts in the muffins on purpose since they tend to soften when cooked in batter. So I made a crispy coating using oat flour, brown sugar, pumpkin spice, salt, melted butter, and candied pumpkin seeds from Trader Joe’s instead.

Unbaked pumpkin pecan muffinsI cooked the muffins in a 375 F preheated oven for approximately 28 minutes after equally distributing the topping over the muffins.

Pumpkin Muffins That Are Good For You

Ingredients

  • 2 1/2 cups oats, rolled 1 cup is set aside for the topping.
  • a half cup of sugar
  • 1 teaspoon of baking soda
  • 1 tbsp spice for pumpkin pie
  • a quarter teaspoon of salt
  • 1 cup pumpkin puree
  • Almond milk, 1/4 cup
  • 1/4 cup unsalted butter, melted
  • 2 Eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup chopped pecans
  • Brown sugar, 5 tbsp
  • Sugar, 2 tbsp
  • 1 teaspoon pumpkin pie seasoning
  • a quarter teaspoon of salt
  • 4 tbsp unsalted butter, melted
  • Pumpkin Seeds, 2 tbsp

Instructions

  • Preheat the oven to 375 degrees Fahrenheit.

  • 12 muffin liners for a 12-cup muffin pan

  • Blend the oats in a food processor for 3 minutes, or until they form oat flour. (Save 1 cup of the mixture for the topping.)

  • 1 1/2 cups oat flour, sugar, baking soda, pumpkin pie spice, and salt in a medium mixing bowl To mix, stir everything together.

  • Combine the wet ingredients in a separate bowl: pumpkin puree, milk, butter, eggs, and vanilla extract. Using a mixer, blend all of the ingredients until they are well mixed. 

  • Fold the flour mixture into the wet mixture carefully. This is crucial since overmixing will result in the muffins not rising.

  • Fill the muffin tins halfway with pumpkin batter.

  • To make the topping, combine the nuts, brown sugar, sugar, pumpkin pie spice, salt, and melted butter with the reserved 1 cup of oat flour. Stir until the mixture is crumbly.

  • Distribute the topping evenly among the muffins. Then, approximately 1/2 teaspoon pumpkin seeds should be sprinkled over each muffin.

  • Bake for 25-28 minutes, or until a toothpick inserted into the center comes out clean.
