3. One-Pot Chicken and Brown Rice: This easy recipe is perfect for busy weeknights. Simply cook chicken breasts and brown rice in one pot with chicken broth, garlic, and your favorite spices. Once everything is cooked through, add in some frozen vegetables of your choice (we love peas and carrots) and let everything steam together until heated through. So simple and so delicious!

How to cook brown rice

Cooking brown rice is similar to cooking white rice, but it takes a bit longer. To cook brown rice on the stove, bring a pot of water to a boil and then add the rice. Boil for 30 minutes, or until the rice is cooked through. Drain any excess water and then serve.

-Keto Fried Rice

Ingredients:

-1 head of cauliflower, riced

-2 tablespoons olive oil

-1 onion, diced

-2 cloves garlic, minced

-1/2 teaspoon ginger, minced

-1/2 a red pepper, diced

-1/4 cup coconut aminos

-3 tablespoons sesame oil

-3 green onions, thinly sliced

Instructions:

1. In a large skillet over medium heat, sauté onion in olive oil until soft.

2. Add garlic and ginger and cook for an additional minute.

3. Add cauliflower rice and red pepper and sauté for 4-5 minutes until the cauli rice is slightly softened.

4. Pour in the coconut aminos and sesame oil and mix everything together well.

5. Cook for 2-3 more minutes until the cauli rice is tender but not mushy.

6. Remove from heat and stir in green onions. Serve immediately.
