Fingerling Parmesan Potatoes

Fingerling Parmesan Potatoes are a healthy baked potato that is a good source of vitamin C, B6, and folate. They’re made by topping the potatoes with fresh mozzarella cheese before baking them in the oven until they crisp up on top. It’s perfect for those who want to try something new without any extra effort or prep time!

The “whole roasted fingerling potatoes” is a side dish that can be served with any entree. It’s an easy and delicious way to get your vegetables in.

My favorite method to bake potatoes is using fingerling Parmesan potatoes. They’re rich and creamy, with a lot of taste.

These small potatoes are one of my favorites because of their delicious taste.

Delicious and creamy.

However, since they are so little, peeling them takes a little more work.

So, why would you want to peel them, you may be wondering?

And you’d be correct in most cases, owing to the skin’s abundance of nutrients.

However, you would lose the melt-in-your-mouth creaminess of this dish if you kept the skin on.

Plus, instead being dark, they came out wonderfully golden for display.

So, let’s get started.

Fingerling Parmesan Potatoes Ingredients

  • Fingerling Potatoes
  • Butter
  • Parmigiano-Reggiano
  • Spicy Lemon Pepper
  • Oregano

How to Make Parmesan Fingerling Potatoes

Preheat the oven to 400 degrees Fahrenheit.

Using parchment paper, line a sheet pan.

Potatoes should be peeled.

Then, in the microwave, heat the butter for approximately 20-22 seconds.

In a mixing basin, combine the potatoes and melted butter and toss to coat.

In a separate dish, combine the Parmesan cheese, lemon pepper, and oregano.

Place the potatoes on the prepared baking sheet after rolling them in the cheese mixture.

Separate them from one another to ensure consistent cooking.

Preheat the oven to 350°F and bake for 1 hour.
